In this paper the historical background in Japan was clarified and relation and the role were also considered. The same idea as the present "Yaku-zen" is able to be seen in the dish which brought relation to a traditional event and traditional customs of Japan. The idea of this "Yaku-zen" corresponds also to the present-day natural intention and it is thought that it would be observed increasingly from now on.
